• 300 g wholemeal pasta • 1 cucumber • 200 g rocket • 40 g toasted walnuts • Salt • 1 avocado
• 1 tbsp olive oil • Juice of 1 lemon • 1 pot soy yoghurt • 1 bunch of fresh mint
Instructions:
• Peel and stone avocado, and mash it • Mix it with the lemon juice, yoghurt, a pinch of salt, and 10-12 mint leaves. • Cook the pasta in plenty of salted water. When cooked, rinse to stop the cooking process. • Mix the pasta and the sauce with the avocado. • Peel the cucumber and cut into thin slices. • Mix with the pasta and sprinkle with the toasted walnuts.
