3-seaweed tartare

Ingredients:

50 g mixed dried seaweed : dulse, sea lettuce, nori (available in organic stores)
15 g capers
½ garlic clove
½ shallot
½ oignon
2 large gherkins
40 g garlic croutons
10 mL olive oil
1 tbsp balsamic vinegar
3 sprigs of parsley
3 sprigs of chives

Instructions:

Rehydrate the seaweed in a little water for 10 minutes.
Drain and chop finely.
Chop the capers, gherkins, onion, garlic, croutons and herbs.
Mix everything together in a bowl. Add oil and vinegar.
Leave to rest 15 minutes in refrigerator before serving.
