Pasta salad with avocado-mint sauce


300 g wholemeal pasta
1 cucumber
200 g rocket
40 g toasted walnuts
1 avocado
1 tbsp olive oil
Juice of 1 lemon
1 pot soy yoghurt
1 bunch of fresh mint


Peel and stone avocado, and mash it
Mix it with the lemon juice, yoghurt, a pinch of salt, and 10-12 mint leaves.
Cook the pasta in plenty of salted water. When cooked, rinse to stop the cooking process.
Mix the pasta and the sauce with the avocado.
Peel the cucumber and cut into thin slices.
Mix with the pasta and sprinkle with the toasted walnuts.
